Maple Bran Muffins
1 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 cup plain yogurt (not greek)
1/2 cup vegetable oil
1/3 cup Wood's maple sugar
1/4 cup Wood's maple syrup
2 eggs
1/2 teaspoon pure vanilla extract
1+1/2 cup bran cereal
1 cup wheat bran
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Line muffin tin with paper baking cups.
  3. Whisk together flour, salt, baking powder, baking soda, and cinnamon.
  4. In separate bowl whisk together yogurt, oil, brown sugar, maple syrup, eggs, and vanilla.
  5. Mix together dry and wet ingredients
  6. Mix in cereal and wheat bran.
  7. Divide into muffin cups.
  8. Bake 15-18 minutes, or until tester comes out of muffin clean.
  9. Remove and let cool for 10 minutes.
  10. Eat and enjoy.
