    • ⅓ cup broken walnuts
    • 1 teaspoon ground cinnamon
    • ¼ cup unsalted butter, melted

    • 2 cups all-purpose flour (spooned & leveled)
    • 3 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • ⅓ teaspoon salt
    • ¼ cup salad oil
    • ⅓ cup Wood's Vermont Maple Sugar
    • 1 large egg
    • 1 cup milk
    • 1 and ½ cups peeled & chopped apples (½-inch chunks; you need about 2 medium apples)

    Directions

    1. Preheat oven to 400°F (218°C). 
    2. Grease a 12-count muffin pan (or a 6-count jumbo pan) with nonstick spray or line with cupcake liners. You may need a 2nd pan as this recipe makes up to 14 muffins, though you can always bake in batches using 1 pan. Set aside.
    3. Make the crumb topping: Mix the maple sugar, cinnamon, and walnuts together in a medium bowl. Stir in the melted butter using a fork. Keep the mixture in large crumbles, and do not overmix. If you overmix, it will turn into a thick paste. Set topping aside.
    4. Make the muffins: Whisk the flour, baking powder, cinnamon, and salt together in a large bowl. Set aside.
    5. In a separate bowl, whisk the milk, oil, and egg. Pour the liquid into the dry ingredients. Mix until blended. Fold in the apples.
    6. Spoon the batter evenly into each cup or liner, filling ¾ of the way to the top. Spoon crumb topping on each, gently pressing it down so it sticks.
