Cornbread Breakfast Casserole with Sausage, Cheddar & Ghosted Maple Syrup

Ingredients

  • 3 tablespoons butter, divided & at room temperature
  • ½ onion, chopped
  • 16 oz. uncooked bulk sausage
  • ½ cup chopped bell pepper (optional)
  • 2 cups milk
  • 5 large eggs
  • ½ teaspoon salt, or to taste
  • ½ teaspoon garlic pepper
  • 1 teaspoon garlic powder
  • 4 cups leftover cornbread (cut into 1” cubes or large crumbles)
  • 2 cups grated cheddar cheese, or cheese of choice
  • 1 ½  tablespoons Wood's Vermont Ghosted Maple Syrup

Directions

  1. Preheat oven to 375°F (190°C). Grease a 9”x 9" baking dish with 1 tablespoon of butter.
  2. Heat a skillet over medium-high heat, then melt the butter. Add the onions and sauté for about a minute or until softened. Add the sausage, breaking up large chunks, and cook until browned. Stir in the red &/or green bell peppers and cook for about a minute or until softened to your liking. Remove from heat and set aside.
  3. Using a paper towel, blot the meat sauce to remove much of the grease.
  4. In a bowl, whisk together the milk, eggs, garlic pepper, garlic powder, and ghosted maple syrup. Set aside.
  5. In the prepared baking dish, layer about half the cubed or crumbled cornbread. Next, layer ½ the sausage mix and ½ of the green onions and peppers. Then layer ½ the cheese.
  6. Repeat with the remaining cornbread, sausage, green onions, peppers, and cheese.
  7. Pour milk/egg mixture over the cornbread. If cornbread floats, gently press cornbread down into the egg mixture.
  8. Bake at 375°F (190°C) for about 30-35 minutes or until golden and the egg is set. Serve warm.
