Ingredients
- 42 Ritz Crackers
- 1 heaping cup light classic caramel dip

1 ⅓ cups Wood's Chocolate Cherry Cordial Maple Syrup
- 4 ounces almond bark
- Sprinkles for optional garnish
- Flake sea salt optional garnish
Directions
- Line a rimmed baking sheet with parchment paper.
- Layer half of the Ritz Crackers onto the baking sheet. Spread a generous layer of caramel onto each cracker. Top with remaining crackers, gently pressing together. Set aside or refrigerate them to cool, allowing the chocolate on the crackers to set more quickly.
- Using a 1-quart heavy-duty saucepan, bring the maple syrup and almond bark to a boil. Using a candy thermometer, stir until completely melted and smooth, and the candy thermometer reads between 232°F and 235°F.
- Using a large-tined fork, dip the cracker sandwiches into the chocolate, flipping to coat both sides. Tap the fork on the side of the bowl and scrape off excess chocolate.
- Slide the chocolate-coated Ritz back onto the parchment-lined baking sheet. Use a toothpick to slide it off the fork if needed.
- Repeat with remaining ingredients. If the chocolate starts to set up, just place it back over the double boiler to melt it again.
- Sprinkle each cookie with decorative sprinkles or flake salt if desired before the chocolate sets.
- Place the baking sheet in the refrigerator for 30 minutes to 1 hour to set the chocolate more quickly.
