Ingredients
Crust—
- 2 ¼ cups Oreo crumbs
- 4 tablespoons salted butter, melted
Filling—
- 24 oz. cream cheese, room temperature
- 1 cup Wood's Vermont Maple Sugar
- 3 tablespoons King Arthur all-purpose flour
- ¾ cup sour cream, room temperature
- ⅔ cup peanut butter
- 1 teaspoon vanilla extract
- 4 large eggs, room temperature
- 1 ½ cups chopped Butterfingers
Ganache—
- 6 ounces semi-sweet chocolate chips
- ½ cup heavy whipping cream
Whipped Cream—
- ¾ cup heavy whipping cream
- ½ cup powdered sugar
- ⅓ cup peanut butter
- ¼ teaspoon vanilla extract
Directions
Crust Preparation—
Preheat oven to 325° F.
- Take some Oreos and either chop them in a food processor or put them in a bag and crush them.
- Combine Oreo crumbs with melted butter.
- Press the mixture into the bottom of a springform pan. I used a deep Pie Plate.
- Bake for 10 minutes.
- Prepare a water bath for later use.
Filling—
- In a mixing bowl, beat cream cheese, sugar, and flour until smooth.
- Blend in sour cream, peanut butter, and vanilla extract.
- Add eggs one at a time, mixing just until incorporated.
- Fold in chopped Butterfingers.
- Pour the filling over the crust.
- Place the pan/pie plate in a water bath and bake at 300°F for 1 hour and 25 minutes.
Ganache—
- ¾ cup of cool whip from an 8 oz. container. (Heat the heavy cream until hot but not boiling.)
- Melt the chocolate chips in a glass bowl in the microwave.
- Mix with the remaining cool whip until smooth,
- Spread ganache over the cooled cheesecake.
Whipped Cream—
- Beat the Cool Whip, powdered sugar, peanut butter, and vanilla extract until stiff peaks form.
- Spread the top of the cheesecake over the ganache mixture.
- Sprinkle additional chopped Butterfingers for garnish.
Chill—
- Allow the cheesecake to chill in the refrigerator for at least 4 hours or overnight before serving.
