Maple Cheesecake Cookie Bars (Easy Chocolate Chip Cookie Dough Dessert)
You know those desserts that disappear so fast you start wondering if your kitchen has a secret portal to another dimension? Yeah. These are those.
These Maple Cheesecake Cookie Bars are basically the dessert version of a group hug: a buttery chocolate chip cookie crust, a creamy cheesecake center, and a cookie crumble topping that looks casual but delivers maximum joy.
And the “wait, what is that amazing flavor?” upgrade is Wood’s Vermont Maple Sugar mixed into the cheesecake layer. It adds a warm, caramel-maple depth that makes the filling taste richer and more bakery-style—without turning the whole thing into a maple billboard.
Why Maple Sugar Belongs in Cheesecake Bars
White sugar sweetens. Maple sugar sweetens and brings personality.
Wood’s Vermont Maple Sugar adds a cozy, toasted note that pairs beautifully with tangy cream cheese and chocolate chips. It’s the little twist that makes these bars taste like you planned dessert with intention… not like you grabbed cookie dough and said, “Good luck, everyone.”
- Richer sweetness that isn’t one-note
- Caramel-maple depth that makes cream cheese taste extra dreamy
- Perfect balance with chocolate chips and cookie crumble
Cookie Dough + Cheesecake: A Love Story
Here’s the thing: cookie dough is already excellent. Cheesecake is already excellent. Put them together and you get a dessert that feels slightly unfair to every other dessert you’ve ever made.
The bottom layer bakes into a soft, chewy cookie crust. The center turns into a creamy cheesecake layer that slices like a dream once chilled. And the top? Cookie crumble that turns golden and makes people fight over corner pieces with the confidence of someone who has never once experienced consequences.
Optional Coconut (Choose Your Adventure)
This recipe gives you the option to add coconut to the cheesecake layer, and it’s a fun twist if you like a little texture and that sweet coconut flavor.
- Add coconut if you want a tropical-ish vibe and a little chew.
- Skip it if you want classic cheesecake-cookie bar energy.
Either way, you win.
The Most Important Step: Chill Time
I know. Waiting is rude. But chilling these bars is what transforms them from “hot delicious mess” into “clean, perfect slices that make you look like a dessert professional.”
After baking, let them cool, then refrigerate for at least a couple of hours. That’s when the cheesecake layer sets up, the flavors settle in, and slicing becomes easy instead of… interpretive.
Serving & Storage Tips
- Slice into 16 bars for easy grabbing (4 rows by 4 rows).
- Serve chilled for the best texture.
- Store in the refrigerator so the cheesecake layer stays firm and happy.
These are perfect for potlucks, parties, bake sales, and “I had a long day and deserve a bar the size of my feelings” moments.

1 package (8 oz.) Philadelphia Original Brick Cream Cheese, softened
- ¼ Wood's Vermont Maple Sugar

- In an ungreased, 9- or 8-inch square pan, break up half of the cookie dough. With floured fingers, press the dough evenly in the bottom of the pan to form a crust. Spread cream cheese mixture over dough. Crumble and sprinkle the remaining half of the dough over the cream cheese mixture.
