This Tomato and Basil Egg Bake is a quick, hearty breakfast—cherry tomatoes, basil, eggs, cream, and cheese—finished with a bold twist of Wood’s Vermont Smoked and Ghosted Maple Syrup for sweet-smoky heat. Ready in under 30 minutes.
Ingredients
- 1 cup cherry tomatoes, halved
- 2 teaspoons extra-virgin olive oil (More or Less for greasing the baking dish.)
- 4 leaves basil
- 1 teaspoon salt
- ¼ teaspoon black pepper (garlic pepper is a good option)
- 6 large eggs
- ⅓ cup heavy cream
- 1 ½ teaspoon each of Wood's Vermont Smoked and Ghosted
- Maple Syrup
- ½ cup grated Parmesan, shredded mozzarella, or shredded cheddar cheese
Directions
Preheat oven to 375° F.
Lightly grease an 8 x 8 baking dish with olive oil.
Arranged the cherry tomatoes in the baking dish.
Whisk eggs, heavy cream, salt, and pepper until smooth and slightly frothy.
Pour egg mixture over tomatoes, then sprinkle with cheese and basil.
