Ingredients
- 1 lb brisket

1 ¼ cups Wood's Vermont Bourbon Barrel Aged Maple Syrup
- 2 cups shredded cheddar cheese
- 4 waffles (store-bought or homemade)
- Butter (for grilling and spreading)
- Additional Bourbon Maple Syrup or traditional maple syrup for topping.
Homemade Waffles—
- 2 ¼ cups sifted all-purpose King Arthur flour
- 4 teaspoons, baking powder
- ¾ teaspoon salt

1 ½ tablespoons. Wood's Vermont Maple Sugar
- 2 beaten eggs
- 2 cups milk
- ¾ cup salad oil
Directions
Cook the Brisket—
Slow-cook the brisket in a saucepan over low heat. Pour the bourbon maple syrup over the meat and simmer for 45 minutes, stirring occasionally, until the meat is tender and shreddable.
Prepare Waffles—
Sift together the dry ingredients.
Add the eggs, milk, and oil, and beat or whisk until well combined and moistened.
- Bake batter in a preheated waffle baker.
- If using store-bought waffles, toast lightly so they’re warm and slightly crispy.
- Butter one side of each waffle. These will be the exterior grilling surface
- On the unbuttered side of the waffle, layer cheddar cheese, then shredded brisket, and more cheese if desired. Place another waffle over the brisket and cheese, buttered side up.
Grill the Sandwich—
- Heat a skillet over medium heat. Grill each sandwich for 3–4 minutes per side, pressing gently, until golden and cheese is melted.
- Slice and serve warm with additional bourbon, maple syrup, or traditional maple syrup.
Recipe Note
I added coleslaw to the sandwiches I made, or it can be served as a side dish.
